Gabe’s Stuffed Acorn Squash

Craving something perfect that matches the season? Here you go, this is the perfect late fall early winter dish. You’ll love the deep zesty flavor. It’s super easy to make. Here’s how you make Gabe’s Stuffed Acorn Squash.

What You’ll Need


2 Acorn Squash
3 Tbsp olive oil
8 oz baby bella mushrooms-stems removed and sliced
8 oz canned tomato sauce
1 lb Italian sausage removed from casings (sub any Gabe’s flavor)
4 thick cuts of Gabe’s bacon-diced
1⁄2 white onion-diced
2 cloves garlic-minced
1⁄2 cup cooked wild rice
Dash of red pepper flakes (optional)
1 tsp fresh thyme-roughly chopped
3⁄4 cup bagged shredded mozzarella and provolone cheese mix
Salt and pepper to taste

Directions


Preheat oven to 400 degrees. Cut each squash in half and remove seeds. On a lined baking sheet place squash cut side up. Brush with olive oil and sprinkle with salt and pepper. Bake in oven for 30 minutes. Remove squash from oven and turn over to continue baking for 10-15 more minutes. Remove squash from the oven and reduce heat to 350 degrees. While squash is baking, cook the rice per package instructions. Add one tablespoon of olive oil in a large skillet over medium heat and start browning the diced Gabe’s bacon. Once browned, place bacon on a paper towel lined plate. Remove most of fat or save elsewhere for a later day. Cook the Gabe’s Italian sausage (sprinkling in optional red pepper here) in the same skillet until browned and place on the plate with bacon once it is fully cooked. Remove most of the grease, saving some to cook the vegetables in. Place mushrooms, onions, garlic, and thyme in pan and
cook until mushrooms are soft and onions are translucent. Add the tomato sauce and rice, stirring until all ingredients are mixed evenly and heated through. Taste and adjust salt and pepper to your liking. Place acorn squash back with cut side up and start spooning filling inside of the squash. Fill as much as possible and place in the oven for 10 minutes. Remove squash from oven and evenly top each squash with cheese and return into the oven for about 5 minutes or until cheese is fully melted. Remove from oven, let sit for 3 minutes to cool. Serve and enjoy!
